Italian Sausage & Tomato Egg Bake

Cooking Time: 16 minutes
½ Italian sausage, sliced into ¼-inch thick
1 tablespoon olive oil
3 eggs
4 cherry tomatoes (in half)
Chopped parsley
Grano Padano cheese (or parmesan)
1) Lightly grease baking pan of air fryer with cooking spray.
2) Add Italian sausage and cook for 5 minutes at 360oF.
3) Add olive oil and cherry tomatoes. Cook for another 6 minutes.
4) Meanwhile, whisk well eggs, parsley, cheese, salt, and pepper in a bowl.
5) Remove basket and toss the mixture a bit. Pour eggs over mixture.
6) Cook for another 5 minutes.
7) Serve and enjoy.
