Maras Pepper Lamb Kebab Recipe from Turkey

Servings per Recipe: 2
Cooking Time: 15 minutes
1-lb lamb meat, cut into 2-inch cubes
Kosher salt
Freshly cracked black pepper
2 tablespoons Maras pepper, or 2 teaspoons other dried chili powder
mixed with 1 tablespoon paprika
1 teaspoon minced garlic
2 tablespoons roughly chopped fresh mint
1/2 cup extra-virgin olive oil, divided
1/2 cup dried apricots, cut into medium dice
1) In a bowl, mix pepper, salt, and half of olive oil. Add lamb and toss well to coat.
Thread lamb into 4 skewers.
2) Cook for 5 minutes at 390oF or to desired doneness.
3) In a large bowl, mix well remaining oil, mint, garlic, Maras pepper, and apricots.
Add cooked lamb. Season with salt and pepper. Toss well to coat
4) Serve and enjoy.
